Description
Viticulture: | Vine age: 21 years - Density: 4,000 vines per hectare - Yield: 4.9 tons per hectare - Probably the most balanced block on the farm in terms of vine growth and yield. A high canopy protected the grapes from sunburn. Intensive and calculated irrigation was used to combat the heat. |
Vinification: | Grapes were picked in three stages; the first for natural acid; the second, four days later, for fruit concentration; and the third a further four days later, for mouth feel. All pickings were done early in the morning and the grapes were vinified using highly reductive processes. The juice remained in contact with the skin for six hours before pressing, and was settled for 24 hours before racking. Fermentation occurred over a 13 day period using three different yeast types before the wine was filtered and bottled. |
